The harvest season falls between half September and the beginning of October.

Mature and healthy grapes will be collected, only by hand.

The pressing is soft and progressive in order to preserve quality and spotless juices. This second step is realised in 3 times, providing 3 different "must" (juices): "Cuvee", "Première taille" and "Deuxième taille".
